Abstract

The term food security is a complex concept which might have different meanings that vary according to the consulted sources. In this regard, it is relevant to carry out a literature review in order to examine the different connotations that are attributed to the term at national and international levels if we intend to analyze the food security state here, in Colombia. Providing an ideal status of food safety is a challenge that must be assumed by all countries in the world, including ours. In a globalized world with increasing people, animal mobility and free trade agreements, it is important to ensure the consumer’s health, strengthening public veterinary health services and internal and transboundary systems of inspection, to hence be able to control national food consumption, as well as its imports and exports.
